Week 17: Deep Dish Blueberry-Bacon Pie

On Friday, we had our annual Fall Harvest Potluck at work. It’s such a lovely event —our horticulture team created beautiful tablescapes for the meal, we hired a pianist to play in the background, and we always have so much food that it’s difficult to do anything but sit and stare at your computer screen for the rest of the day.

I actually stayed home from work the day before the potluck because I finally succumbed to a cold. Not surprising considering more than half my office has been sick for the past few weeks. Staying home did allow me more time to make this pie, though. Don’t worry, all germs were contained during the making of this pie!

I chose to do the Deep Dish Blueberry-Bacon Pie in place of a more traditional Thanksgiving pie because I was worried others would be bringing a bunch of apple/pumpkin/pecan, and this one still felt autumnal with the oats and ginger on top. Plus, I already made a pecan pie and there’s no pumpkin in the cookbook, so I thought I’d save the apple for real Thanksgiving.

What’s Inside: Blueberries, bacon, oats, cinnamon, cardamom, pecans, crystallized ginger

“Pro” Tips:

1) I have yet to perfect the cookie crumb crust. I never seem to get the cookies high enough up the sides of the pie dish. Don’t be afraid to really spread it out! Before versus after baking below.

2) I recommend (personal preference) cutting the pieces of bacon even smaller than the recipe calls for. Upon eating the finished product, I felt like I would have enjoyed more subtlety with the bacon.

3) If you don’t feel like spending $15 on a bottle of cardamom like I did, there are other options. Although there is no exact substitute, you can mix equal parts cinnamon and nutmeg. If you don’t have nutmeg, you can do cinnamon and ginger or cinnamon and ground cloves.

4) Pile the streusel up as high as possible, even if you’re afraid it’s overflowing. The pie sinks a bit after baking.

What Baking Can Do:

I was pleasantly surprised by this somewhat odd mixture of bacon, blueberry, ginger, and oats. As I said earlier, I would have preferred smaller pieces of bacon, but I didn’t hear any complaints from my co-workers. I couldn’t eat more than two bites of my pie, though, because this was the amount of food we consumed that day:
